Whether you’re putting together a party or just looking for some fun snack ideas, these three St. Patrick’s Day desserts are sure to add some Irish flair to your celebrations.

Homemade shamrock shakes

To recreate a favorite St. Patrick’s day treat at home, try this simple homemade shamrock shake recipe. Start by blending together two cups of vanilla ice cream, one and ¼ cups milk, ¼ teaspoon mint extract, and nine drops of green food coloring until it forms a smooth mixture.

Next, drizzle chocolate syrup around the inside of two tall glasses and pour your shake into the glasses. Finally, top the shakes off with whipped cream and, optionally, green decorator sugar or sprinkles.

Green velvet layer cake

If you need a main dessert item for a St. Patrick’s day party or get-together and have some time for preparation, try this green velvet layer cake. Start by preheating your oven to 375°F and lining three eight-inch round cake pans with butter and parchment paper. In a medium bowl, whisk together two and ½ cups of all-purpose flour, two tablespoons unsweetened cocoa powder, one teaspoon baking powder, and ½ teaspoon each of baking soda and fine salt.

In a large measuring cup, mix together one and ¼ cups buttermilk, one tablespoon green food coloring, and two teaspoons pure vanilla extract. Then, beat together two cups of granulated sugar and one cup of unsalted butter for about five minutes. Slowly add three lightly beaten large eggs and beat until incorporated. Turn the mixer down to the lowest settings and add in portions of the flour mixture and the buttermilk mixture, mixing between additions, until everything has been mixed in.

Divide the cake batter into the three prepared pans, then bake for 20-25 minutes and let cool. To assemble, use storebought or homemade buttercream frosting mixed with green food coloring. Stack the three cake layers on top of each other with frosting in between them, then frost the top and sides. Optionally, decorate with green or gold garnishes of your choosing.

Chocolate mint brownies

Another great green St. Patrick’s day treat is this recipe for chocolate mint brownies. You’ll start out by preheating the oven to 350°F and greasing a 9×13-inch baking pan. In a large bowl, mix one cup sugar and ½ cup softened butter until smooth. Add in four eggs one at a time, beating until smooth, then stir in one and ½ cups chocolate syrup. Stir in a cup of flour, then press the batter into your baking pan.

Bake your brownies for 25 to 30 minutes and let them cool. In a small bowl, mix together two cups powdered sugar, ½ cup butter or margarine, and two tablespoons creme de menthe until smooth. Spread this mixture over your brownies. Then, in your microwave, melt six tablespoons of butter and a cup of chocolate chips. Let this cool slightly, then spread or drizzle it over the mint layer. Let your brownies cool one more time and serve!
